There's a link between obesity and white rice. There's another link between diabetes and white rice. But yet it remains the staple food of Japan and many other countries, so how can white rice be healthier? Of course, but cutting the calories by 50%! I wouldn't recommend this method if you're in dire need of every calorie like if you're living in a third world country but if you or your doctor believes that you need to cut down on rice calories, here's how you do it.Boil the water as you normally would and before you add the rice add coconut oil. Then add the rice and cook it as you would any other day. Afterwards, put it in the refrigerator for 12 hours and that's all you need to do!The way it works according to an undergrad student in Sri Lanka is that the coconut oil interacts with the starch in the rice and changes its architecture. When you chill the rice in the refrigerator, it helps the conversion of starches.This is good news since I make rice almost every day and I've noticed a little bit of fat over my 6-pack (now borderline keg, thanks rice!). I'll definitively give it a try and see how well this works.
